Feta Bow-Tie Pasta :: My Family’s Favorite Healthy Recipe

This is my 15 year-old daughter’s favorite healthy recipe. However, this recipe precedes both of our daughters. My husband & I found it while we were young & just out on our own. We had the cutest little loft apartment! So this recipe will forever be special to me. Back then we could’ve never imagined that we’d one day be making it for our daughters too! Pretty cool.

I wish I could thank the developer of this recipe. It’s been the center of lots of familial joy. To keep it all to myself would be quite selfish, don’t you think? Enjoy!

Feta Bow-Tie Pasta

• 16 oz. mini farfalle pasta {bow-tie pasta}

• 10 oz. spinach {fresh or pre-packaged}

• 13.5 oz. chicken {+/-}

• 8-12 oz. feta cheese {12 oz. is real cheesy}

• {3} – 3.8 oz. cans sliced ripe olives

• minced garlic to taste

• salt & pepper to taste

  1. Bring large pot of water to a boil & cook pasta according to package directions. Drain, do not rinse, set aside.
  2. Warm a little olive oil & garlic in a large skillet. Next add spinach to skillet & salt & pepper to taste. Stir spinach gently until cooked. Remove from skillet, cover & set aside.
  3. Add more garlic to the skillet. Add chicken & salt & pepper. Cut chicken into small pieces as it’s cooking/heating thoroughly in the skillet.
  4. In the large pot in which the pasta was boiled, mix all ingredients together & voila, finished!

• Serve with garlic bread &/or salad.

• Remove chicken for a great vegetarian meal or side dish!
